Grilled peaches and vanilla ice cream go together like peanut butter and jelly but without two slices of bread. Fashionistas and easy recipe go-toers, I have found your next dessert for your next dinner party or intimate dinner date. These warm summer months have resulted in bringing incredibly fresh produce this season, especially in the Pacific NW. These are the items you will need to make grilled peaches + vanilla ice cream:
fresh peaches (one large peach has about 4 slices. 2 slices for each dessert)
maple or brown sugar
canola oil (2 tblsp.)
vanilla ice cream
Take your knife and carefully cut around the pit of the peach. One large peach has about 4 slices.
Once the top and bottom of the peach are cut off, carefully remove the peach pit.
Add 2 tblsp. of canola oil on plate. Flip each side of the peaches so that the top and bottom are lightly coated in canola oil.
Carefully place each slice of the peach on the BBQ on medium heat. Peach slices do not take long to cook, depending on the their size (3-5 minutes). Make sure they’re soft but do not over cook them.
Once they’re seared on each side, take the peaches off the BBQ and put them aside. Lightly sprinkle brown or maple sugar (only if needed). Scoop vanilla ice cream into your bowl of choice and add two slices of peaches. Serve immediately – they taste best fresh off the grill.

I love eggplant – especially when it’s dipped in egg, rolled in panko and then fried. I found this recipe when I was on my favorite app, Flipboard on my iPad via Matt Romero’s Eggplant “Sandwiches”. I thought this would be perfect for when I have my vegetarian friends over for dinner. Check out this simple recipe below! Enjoy.
Eggplant Panko Sandwich Ingredients: Serves 5
2 large eggs
1/2 cup olive oil
1 cup panko
4 large lettuce leaves chopped in half
2 tomatoes (I love tomatoes – so you only need 2)
crumbled feta cheese
Slice the tomatoes and eggplant in 1/2 inch slices. Cut the lettuce leaf in half or smaller pieces. Note: I put the eggplant in salt water – but you should actually lay the eggplant on a paper towel and sprinkle them with salt to let them “sweat out the moisture.” This will allow the eggplant to stay firm while you build your sandwiches.
Beat the two eggs in a separate bowl and put the panko in another. The original recipe called for flour, but I think it burns the oil and the eggplant takes a lot longer to cook, there are more calories for my fashionista friends, and the eggplant pieces look perfectly golden brown when just frying it in panko.
On medium/low heat, heat up the olive oil while you are prepping the eggplant. To test to see if the oil is ready, place a few panko crumbs into the pan. If they begin to sizzle, the oil is ready.
Make sure the front/back/sides of the eggplant are covered. Then start your frying!
Once the eggplant is golden brown on each side, take the eggplant off the burner and transfer it to a pan with paper towels. Dab off the excess oil and sprinkle the eggplant with kosher salt.
Now, it’s time to assemble your sandwiches. Take two pieces of eggplant, lettuce, tomato, basil and feta and Ta-Da!

I was looking through my Pinterest a few days ago and found this awesome new Head Scarf tutorial from the blog, Kalani’s Korner by Kailani Andrade. I am so excited I found her blog via Pinterest – I love when I stumble on new people doing new things! I tried doing Step 3 with the hair all up and it was perfect with my vintage Christian Dior scarf because it’s small and square. I would also love to try to do a turban scarf, I know, I might sound crazy but I just when a scarf acts like basically a hat. It’s amazing.
I found this DIY Dip Dye Scarf craft via Martha Stewarta few months ago and have been dying to make my own ombre scarf. I think dip dying an old white scarf or customizing it the way you want is perfect for spring or it’s great to have in your closet for all year round weather. Don’t you love the blue dye? Shanghai, China is my favorite city in the entire world (I know – big statement). The reasons why I love Shanghai are: fashion, historic/international architecture, multinational cultures, world renown restaurants and Shanghai’s culture itself. My favorite spot in Shanghai is Tian Zi Fang 田子坊. Tain zi fang consists of old alleyways and houses that have been converted into cute boutique shops, art galleries, cafes, and bars – the past four times I have been to Shanghai, I have visited this adorable space. Tian Zi Fang is always my number one place to go when I visit this city. I apologize for my stack of photos for this post, but I am seriously in love with this little spot. You can find souvenirs, expensive lattes, and perfect photo opportunities in this cute, cramped space. I recommend coming to this tourist destination on a week day, and not on a crowded weekend. I had the opportunity to come here on a Wednesday afternoon, and it was pretty much empty. If you get the chance to visit Shanghai – Tian Zi Fang must be on your places to visit! x
