This past summer I shopped around farmer’s markets and berry stands with my tangerine tote, and when my favorite berries were in season, blueberries, I had to make this perfect, summer cocktail, Blueberry Mint Sparkling Cocktails. Blueberries have a great source of antioxidants and vitamins, and they work fabulously in this simple, fun cocktail recipe. These are perfect for poolside layouts, summer luncheons, and evenings.
Blueberry Mint Sparkling Cocktail Ingredients:
- 2 cups of fresh blueberries (save extra blueberries for garnishes)
- Fresh pieces of mint (garnishes)
- 2 cups of pink lemonade
- 1 bottle of chilled Prosecco (I used Mionneto Prosecco from Trader Joes)
First, simply puree 2 cups of fresh blueberries. After the blueberries are pureed, put the liquid through a strainer and try to get rid of as many seeds as possible. You can either chill the puree for several hours are use it right away. Then, in a separate pitcher, add the chilled pink lemonade and prosecco. Carefully fill the bottom of the glass with a spoonful of puree, and then carefully top off the glass with the pink lemonade and prosecco mixture. The combination of the blueberry puree and prosecco will fizz a lot, so as gracefully as you can, use a spoon to scoop the foam off the top of the glass and add a beautiful garnish. In the image above I took a toothpick, added three blueberries and garnished it with fresh mint. Serve immediately and enjoy!
