Caprese Salad

This week in Portland, it has quickly transitioned into my favorite season, Fall. Temperatures have dropped, rain is beginning to fall and gray hues are taking over the city. I have been expecting this for a month and now that it has finally happen it feels like Halloween is around the corner. One recipe that is always a great Summer dish is a simple Caprese Salad. It makes a great appetizer, snack or even a light dinner. It’s simple, tasty and fresh. Try it out before the leaves all fall.

Ingredients via Tangerine Tote’s Polyvore

  • Beefsteak (Large) Tomatoes
  • Fresh Mozzarella
  • Basil
  • Olive Oil
  • Balsamic Vinegar
  • Optional: Salt and Pepper

Pair this with a cheap red and boom! Easy appetizer! My Tangerine Tote philosophy is, is that if you supply the drinks and simple eats, have your friends make the dinner! Enjoy.
