Pomegranate Mimosas

Pomegranate Mimosas
Need an easy Holiday cocktail, fashionistas? I have the perfect cocktail to serve your girlfriends at your swanky holiday party or family dinner with your parents. I used this recipe for Thanksgiving and everyone loved it, especially with the fresh pomegranate seeds I used to garnish it with. Follow this easy recipe and serve chilled.
Pomegranate Mimosas Ingredients

  • 1/2 cup granulated sugar
  • 1 cup plus 2 Tbs. unsweetened pure pomegranate juice (such as Pom brand), chilled
  • 1 750ml bottle dry sparkling wine or Champagne, chilled
  • One pomegranate, peeled with seeds in a separate bowl

Step One:
Make the simple sugar syrup. In a small saucepan, combine sugar and 1/2 cup water and bring to a boil over high heat. Stir the sugar until it dissolves. Boil for 1 minute. Cool and then refrigerate. This should be enough syrup for 15 cocktails.

Step Two:
In a small pitcher, combine the pomegranate juice and 3 Tbs. of the sugar syrup. Fill six champagne flutes (or glasses of choice) with one-third full of pomegranate mixture. Top up with the sparkling wine. Serve immediately.

Cheers! Happy Holidays, everyone! I’ll continue to post more Holiday entries.
